Jeti-Oguz and Karakol Horseback + Yurt Visit are beginner-paced and generally fine for children over 8 riding with an adult nearby — booking the private version gives you control over pace, which matters more with kids than with adults. Skazka Canyon and the Karakol city tour are easy walking, suitable for most ages. What we'd steer families away from: the Ala-Kul treks and high-altitude paragliding, which are genuinely demanding even for fit adults.
